Ingredients:
2 1/2 cups frozen cauliflower
2 cups chopped bell pepper
1 chopped onion
1 pound ground beef
2 cups cheddar cheese
3/4 tsp garlic powder
3/4tsp salt
1/4 tsp pepper
2 tsp olive oil
Makes 4 Servings
Directions:
1. Heat oil in a large skillet over medium-high heat.
2. Add onions and peppers and cook until tender for about 3 – 4 minutes.
3. Add ground beef and cook until thoroughly done. Add cauliflower, garlic, salt, and pepper. Cook
until cauliflower is tender (For only a couple of minutes).
4. Add cheddar cheese on top of the cauliflower and beef fixture. Turn heat to low, cover with a
lid and allow the cheese to melt! Enjoy!
