4 Boneless and skinless chicken thighs
8 diced zucchinis
1/2 cup tbsp low sugar pasta sauce
1 small can diced black olives
1 package turkey pepperoni
1 tsp Garlic powder
1 tsp Italian seasoning
1 tsp Salt to taste
1 1/2 Cups low-fat mozzarella cheese
1 tsp olive oil

Makes 4 Servings

1. Mix ground chicken and remaining ingredients in a large mixing bowl.
2. Grab a frying pan or skillet and spray with olive oil spray. From the bowl spoon out 8-12 nugget-
sized pieces onto the skillet.
3. Over medium heat cook the chicken poppers for 5 minutes on each side.
4. Sauté chicken and zucchini until cooked, add other ingredients and top with cheese until melted
in the skillet. Enjoy!
